As a Cal alumni, one of those things I miss about Berkeley is getting kimchi fried rice to chow down as I’m ridiculously cramming for a final. Over the course of being away from school, I have gone on quite a journey to try to replicate this dish. Now, having experimented with and modified many ingredients and proportions, I’ve found the right formula for a delicious kimchi fried rice with spam. Follow the steps below and you will not be disappointed!
(Serving Size: for 4 people)
KIMCHI FRIED RICE
- 1 can of Spam
- 1 jar of kimchi (15 oz.) or 1.5 cups
- 3.5 cups of white rice
- 1 tsp chili powder
- 1 tsp cayenne pepper
- 2 tbs rice seasoning
- toasted sesame seeds (to top)
First, dice the spam into cubes and slice larger pieces of kimchi into smaller pieces. Fry the spam on high heat until it is a darker red tone (around 2 minutes). Then, at medium heat, add the rice and kimchi. If your fried rice appears dry, try adding the leftover liquid from the kimchi jar. Mix evenly. Add the chili powder, cayenne pepper, and rice seasoning. Make sure to distribute these spices evenly into the mixture. To top off, fry a sunny-side egg and add some rice seasoning and toasted sesame seeds for presentation. There you have it: a simple, easy dinner! Break that yolk and dig in!
